Serve this tasty soup either as an appetizer or as a main course. Depending on the serving size, you’ll get either 4 large servings or 8 small servings with the quantities in the recipe.

Ingredients

  • 200 g Lapin Liha’s cold-smoked reindeer meat hack
    1 onion
    50 g butter
    7 dl chicken stock
    150 g Koskenlaskija cheese or blue cheese
    3 dl cream
    salt
    fresh thyme
    Maizena cornstarch for thickening

Instructions

  1. Peel and dice the onion. Sauté the onion in butter and finally add the cold-smoked reindeer meat hack.
  2. Measure the other ingredients and add them to the pot. Allow it to come to a boil and simmer for a while, so that the cheese has time to melt. If necessary, thicken with Maizena.
  3. Check the saltiness of the soup by tasting. You may not need to add any salt at all, as the reindeer meat hack and cheese already brings saltiness to the soup.
  4. Season with fresh thyme and serve with bread.
