An easy and delicious meatball tray can be created from Lapin Lihan’s red deer meatballs. It is assembled on a bed of root vegetables flavored with garlic and finished with arugula pesto.

Ingredients

  • 500 g potatoes
  • 3 carrots
  • 3 red onions
  • 2 parsnips
  • 3 cloves of garlic
  • 3 tbsp oil
  • 1 tbsp balsamic vinegar
  • salt
  • black pepper
  • 1 pack of Lapin Liha’s red deer meatballs
  • Rucola pesto
  • ½ dl cashew nuts
  • 1 clove of garlic
  • 50 g arugula
  • 1 dl grated Parmesan cheese
  • 1 tsp lemon juice
  • 1 dl olive oil
  • salt
  • black pepper

Instructions

  1. Wash the potatoes and peel the carrots, red onions, and parsnips. Cut the vegetables into large chunks. Mix together the minced garlic cloves, oil, and balsamic vinegar and drizzle the mixture over the vegetables. Season with salt and black pepper. Spread the vegetables on a baking sheet and roast in a 175-degree oven for about 35 minutes, add the red deer meatballs and continue to cook for another 25 minutes.
  2. Toast the cashew nuts in a pan and finely chop the garlic. Puree all the pesto ingredients with a hand blender. Serve the meatball tray with arugula pesto.
