The hearty country salad is suitable for lunch, dinner, or even as a festive offering. The salad is topped off with crispy fried Lapin Liha’s reindeer cold-smoked roast cold cut and a tangy lingonberry vinaigrette.

Ingredients

  • Lingonberry Vinaigrette
  • 2 tbsp apple cider vinegar
    1 dl oil
    1 dl domestic frozen lingonberries
    2 tbsp sugar
    1 tsp mustard
    1 clove of garlic
    salt
    black pepper
  • 2 slices of rye bread
  • 6 boiled potatoes
  • 1 pack Lapin Liha Reindeer cold-smoked cold cut, paper-thin 80 g
  • butter
  • 1 bag of mixed salad greens
  • 100 g of bread cheese
  • 2 boiled eggs

Instructions

Puree all the ingredients for the lingonberry vinaigrette with a hand blender or in a blender. Cube the rye bread and potatoes.

Firstly, fry the cold cuts of cold-smoked roast until crispy in butter. Then fry the rye bread cubes and finally the potato cubes until crispy in butter. Spread a salad mix on a plate, top with potatoes, rye bread croutons, cubed bread cheese and quartered eggs. Finish the country salad with crispy slices of reindeer cold-smoked roast and lingonberry vinaigrette.
