Ingredients

  • 500 g Lapin Liha’s sautéed reindeer
  • 300 g sushi rice
  • 2-3 tbsp rice vinegar
  • salt, black pepper
  • 2 dl Boke sauce (2-3 tbsp/portion)
  • 2 carrots
  • 150 g shiitake mushrooms
  • 2 tbsp soy sauce
  • green onions
  • coriander
  • fresh chili
  • sesame seeds
  • Additionally, if desired:
  • Mayonnaise
  • Kimchi, sesame oil, or chili

Instructions

  1. Brown the half-thawed reindeer meat in a hot pan in three batches. Season with salt and add a bit of water. Simmer in a pot under a lid for 20 min.
  2. Rinse the rice in a pot until the water is no longer cloudy. Prepare the rice in a rice cooker or boil according to the package instructions. Season with rice vinegar, salt, and black pepper. Spread the rice into a shallow dish to cool. Do not put the rice in the fridge.
  3. Cut the shiitake mushrooms in half and sauté them in a frying pan without oil or butter. Add soy sauce to the mushrooms and set them aside for assembling the dish.
  4. Chop the green onion, carrot, and chili into thin strips.
  5. Assemble the dish on a deep plate, such as a soup bowl. First, place the rice at the bottom, then drizzle Poke sauce thinly over it. Arrange the reindeer meat, carrot, soy mushrooms, and green onion on the rice in separate groups.
  6. Sprinkle with sesame seeds, coriander, and chili.
  7. You can drizzle mayonnaise thinly over the dish, which you can flavor with kimchi, sesame oil, or chili if desired.
