Tasty red deer casserole

Ingredients

  • 500 g Lapin Liha’s red deer meat cubes
  • 2.5 dl cream
  • 5 dl game stock
  • 150 g chanterelles
  • 2 onions, coarsely chopped
  • 2 peeled carrots, coarsely chopped
  • 2 tbsp butter or olive oil
  • 2 tbsp Dijon mustard
  • ½ dl chopped parsley
  • 2 tbsp cornstarch
  • grated horseradish
  • salt and pepper

Instructions

  1. Brown the meat, season with salt and pepper, and place the pieces in the pot. Reserve the tasty meat broth from the pot, add water to the frying pan, and pour it over the meat.
  2. Brown the onions, chanterelles, and carrots as well and add them to the pot. Add water or meat broth as needed, the meat pieces should be almost completely covered. Simmer gently under the lid until the meat is tender, about 1½ hours.
  3. Add the cream and let it simmer for 10 minutes. Season with mustard and if you want to thicken, use cornstarch mixed with water. Add parsley just before serving and garnish with grated horseradish.
  4. Serve with boiled potatoes or mashed potatoes, pickles also go very well.
