Cold-smoked reindeer roast is very low in fat and high in protein. Even a small amount of this tasty meat provides a fine reindeer flavor to dishes or on sandwiches. We use genuine alder chips for the cold smoking.

Ingredients

  • Sour Cream and Horseradish Spread
  • 1 tub of sour cream
    3 tbsp of horseradish paste from a tube
    salt and black pepper from the mill
  • Lapin Liha Cold-Smoked Reindeer Roast
  • 1. Mix all the ingredients, store in the refrigerator. Top with Lapin Liha cold-smoked reindeer roast slices and gherkins on the horseradish spread.
  • Quick Pickled Red Onion
  • 1 dl water
    0.5 dl sugar
    2 tbsp vinegar
    1 red onion, sliced thinly into rings
  • Kotasavu Salami
  • 1. Measure water, sugar, and vinegar into a pot, heat the mixture and stir until the sugar dissolves. Add the onion and transfer everything into a small jar, store in the refrigerator once cooled.
  • 2. The red onion goes well with Kotasavu salami, smoked cheese, boiled potatoes, and capers. Layer on top of rye bread and enjoy.

Instructions

Smörre is a tricky open-faced sandwich, nobody in their right mind would carry such heaped-up slices of bread to a picnic. Not like that, but assemble the sandwiches only after you have spread your blanket on the grass (or a cloth on the kitchen table, like me) and set out the most important thing, i.e. the Lapin Liha cold cuts, horseradish spread, pickled red onion, and other toppings along with the sliced bread for serving – everyone can put together their own sandwiches according to their taste. Below are some tips, but as said, to each their own taste!

Tip: Fresh horseradish is a wonderfully spirited companion for a picnic, take along the finest grater and grate some horseradish on top of the finished sandwich. Tastes divine and will surely surprise the gourmets!
