Grilled reindeer topside roast, flattened potatoes, and herb butter

Ingredients

  • Grilled topside reindeer roast
  • 600 g Lapin Liha’s topside reindeer roast
    salt
    pepper
  • Flattened Potatoes
  • 16 small firm potatoes
    ½ bunch fresh thyme
    ½ bunch fresh parsley
    olive oil
    salt
    pepper
  • Herb Butter
  • 150 g butter (at room temperature)
    ½ bunch fresh thyme
    ½ bunch fresh parsley
    1 clove of garlic
    1 lemon
    ½ green chili
    salt
    pepper
  • Additionally
  • Fresh salad

Instructions

  1. Start by making herb butter. Finely chop the chili and garlic, mix all the ingredients and season with salt, pepper, and lemon zest.
  2. Boil the potatoes with their skins on in well-salted water until they are almost cooked. Press down on the potato so that it looks flattened. Oil the potatoes and add salt and pepper. Grill the potatoes over direct heat until they have a beautiful color on the surface. Put the potatoes in a pot and add herb butter on top so that it melts over the potatoes. Mix. Add chopped herbs on top.
  3. Cut the meat into 1 cm thick slices, season them with salt and pepper. Grill over direct heat for about a minute per side. Remove the meat from the heat and let it rest for 4-5 minutes.
  4. Serve everything together with a generous fresh salad.
