Pasta Bolognese with red deer meat

Ingredients

  • 400 g Lapin Liha´s red deer minced meat
  • ½ finely chopped yellow onion
  • 1 carrot, peeled and finely chopped
  • 1 dl finely chopped chanterelles
  • 1 dl small whole chanterelles
  • 2 pcs chopped garlic cloves
  • 1 tbsp tomato paste
  • 2 dl red wine
  • 2 dl crushed tomatoes
  • 2 dl game stock (diluted)
  • 1 bunch of fresh thyme, chopped
  • 1 small bunch of oregano, chopped
  • 2 dl grated Västerbotten cheese
  • olive oil
  • salt
  • freshly ground pepper
  • 400 g pasta

Instructions

  1. Brown the onion, carrot, and chopped chanterelles. Add the minced meat and brown it.
  2. Add garlic and tomato paste and fry for about one minute. Add red wine and reduce slightly.
  3. Add crushed tomatoes, game stock, and fresh herbs. Let simmer gently for about 30 minutes, season with salt and pepper.
  4. Bring water to a boil in a large pot and add plenty of salt. Cook the pasta for 2 minutes less than the package instructions. Add the pasta to the sauce and simmer gently for 1 minute or until the pasta is ready.
  5. Garnish with Västerbotten cheese and butter-fried small chanterelles.
