Soup made from Lapin Liha’s sautéed red deer is an easy and delicious everyday meal. Serve it with crispy fried rye croutons.

Ingredients

  • 500g Lapin Liha’s sautéed red deer
  • 2 tbsp butter
  • 1 onion
  • ½ leek
  • 1 l meat broth
  • 500g potatoes
  • 2 carrots
  • 1 parsnip
  • 200g processed cheese
  • fresh parsley
  • 4 slices of rye bread
  • 2 tbsp oil
  • 1 clove of garlic

Instructions

1. Thaw the meat about half an hour before frying.

2. Fry the meat in butter in a pot and add chopped onion and leek strips.

3. Sauté briefly and add meat broth.

4. Peel and chop the potatoes and root vegetables and add to the mix.

5. Cook for about 20 minutes and finish the soup with processed cheese and chopped parsley.

6. Dice the rye bread and fry in a pan with oil and a clove of garlic until crispy to make croutons for the soup.
