Red deer burger with chanterelle-
juniper berry mayonnaise

Ingredients
550 g Lapin Liha’s red deer minced meat
50 g lard or suet
200 g bacon
8 slices of Edam cheese
4 leaves of Romaine lettuce
1 cl toasted onion
4 dl unflavored mayonnaise
4 pcs juniper berries
1 dl dried chanterelles
1 tbsp game stock concentrate
pickled red onion
hamburger buns (sourdough)
salt
pepper
Instructions
Start with the mayonnaise. Finely chop the juniper berries and chanterelles and mix into the mayonnaise, then add salt and pepper. Let the mixture rest for a while.
Finely chop or grind the lard and mix it into the minced meat in a bowl, add game stock and season with salt and pepper. Mix.
Shape 4 equally sized patties and let them rest, while you fry the bacon. Place the bacon in a cold pan and gradually increase the heat. This way the fat renders out and the slices become crispy.
Absorb some of the fat by placing the bacon on paper towels.
Fry the burger patties in the same pan, using the bacon fat. Cook the patties to your desired doneness. Place two slices of cheese on each patty towards the end of cooking so that the cheese melts. Toast the buns on a dry pan until they reach the desired color. Then just assemble the burger and serve.
